I like shrimp but don’t eat it to often, my husband and son are not fans of shrimp, my girls just started to like shrimp or should I say popcorn shrimp! When I first started to make this, I would make it with rice, since then I started to make this with pasta as well. You can make it with either, I make a skinny fettuccine alfredo which goes great with this.
What you will need:
- 1 cup parboiled rice
- 2 cups chicken broth or water
- 3 cups peeled thawed shrimp
- 2 cloves of garlic
- 1/4 cup freshly chopped parsley
- squeeze of lemon juice
- 1 green onion
- 1 tbsp salted butter
- 1 tbsp olive oil
Cook rice in chicken broth or water, season with salt.
Meanwhile in frying pan melt the butter, and add olive oil. Add in the grated garlic, chopped green onions, cook till garlic gets fragrant, you may add chili flakes for heat if you desire. Add shrimp and season with salt. Add the parsley and lemon juice when shrimp is done cooking, take the liquid from the shrimp mixture and add to the rice, it gives the rice so much flavour.
When rice is done top with shrimp and enjoy!
