Since I am on a low fat diet (for now) hopefully in time be able to eat a little bit more than I am now, but in the meantime I am learning how to cook low fat and healthy, and I kinda like it. Its not even about the fat, there are so many things that are on the list of yes and no food items, once I am able to include tomatoes, peppers and a little cheese in my diet, I will be much more happier and creative!
I have been eating oatmeal for breakfast everyday so far since I started, since today is Saturday I thought I should treat myself. This plate was for the hubby, I cannot have bagels…yet.
Because I cannot have egg yolks, I use free run egg whites. I don’t measure, just pour into the pan, 3 tbsp equals 1 egg.
Dandelion is great for gallstones, so instead of using parsley which I usually do, I thought why not use the dandelion. It turned out great!
What you need for this is a hand full of dandelion, rinse and chop, 3-4 mushrooms and 1 clove of garlic.
First saute the dandelion and mushrooms in a pan with a little extra virgin olive oil, season with salt. Cook on medium heat till mushrooms brown and dandelion is soft and changes colour, add in sliced garlic, you may want to add a little more oil if its too dry so the garlic can brown.
Push the veggies to the side of the pan, add in the egg whites and scramble. Season with salt. Combine the eggs with veggies, enjoy!
