Tired of the same old mashed potato as a side dish? I got just the thing for you! I love these scalloped potatoes, its easy to make and its so yummy! Its always a hit at my dinner parties, everyone loves it!
Leeks usually come in batches of three, what I do when I get them from the store is prepare them all and freeze the extra, that way you always have them ready to use for your next leek dish, that is if your not planning on using all of them at once!;)
What you will need:
- 1 and 1/2 pkg leek soup mix
2 cups milk
10 medium yukon gold potatoes
1 leek
butter
1/2 cup grated Romano or Parmesan cheese
Cut leek into bite size pieces, rinse the sand and dirt off well. Saute with salted butter in a pan till tender season with salt, meanwhile peel potatoes and cut into slices. Combine soup mix with milk, add in the leek, season with a bit of salt. Butter 9×13 casserole dish and place a layer of potatoes, spoon over some soup mixture over the potatoes and continue layering the potatoes with the soup mixture, top with last layer of potatoes and pour over the remaining soup mixture.
Sprinkle cheese on top and bake covered at 350 for 30 minutes, then uncover and continue to bake till golden on top and potatoes are tender, check with a fork. Enjoy!
Oh la la. I’d take scalloped potatoes any day.
