Playing with my food again….I have been wanting to try the Rubik’s cube salad for a while now but I was intimidated as I am not good with chopping and cutting. I tried my best to make the cubes the same size and put it all together, I think I did okay for the first time. It is no where close to the perfect ones I have seen on the net…but for me it’s good!
I had a yellow tomato and cucumber from my garden, they tasted so fresh and yummy, I had intended to make it feta but my feta cheese is a soft kind and breaks easily, fresh mozzarella would have been a good choice as well, but I didn’t have any. I used Spanish cheese, also known as Chicago cheese, the closest cheese to that is haloumi cheese. It is squeaky and salty makes a nice contrast with the sweet fruit.
You can make this with any fruit that can be cut up into cubes, I happen to have these ones on hand.
What you will need:
- Watermelon
- Yellow tomato
- Cucumber
- Spanish cheese
Cut watermelon, cheese, cucumber and tomato into same size squares and shape it into a Rubik’s cube. Serving suggestion, drizzle of olive oil chopped up fresh basil or mint and salt if desired. Enjoy!
Neat! I wonder what my husband would say if I served his this for a meal… He thinks I am crazy already by some of displays on my plate.
