Red pepper and feta cheese omelettes are one of my favourite omelletes!
What you will need:
- 6 eggs
- 1/4 cup milk
- 2 red bell peppers cut into bite size pieces or julienne cut
- a hand full of feta cheese
- salt and pepper to season
- butter and oil for cooking
In large pan cook the peppers in some olive oil. When cooked remove from pan.
In the same pan melt about 1 tsp butter and add 1 tsp olive oil, spread evenly in pan.
Whisk the eggs and milk, season with salt and pepper. Pour into pan, cook on low you may cover it with a lid to speed up the process.
Add the peppers and feta to one side of the omelette and fold over the other side.
Slide onto a serving plate.
