This is a tasty, refreshing and easy summer dessert! Delight your family and friends with these lovely parfaits.
What you will need:
- 1- 8 oz pkg of cream cheese, softened
- 1 pkg instant vanilla pudding
- 1 1/2 cup milk
- juice of 1/2 lemon
- 1 tbsp lemon zest
- 1/4 cup sugar
- fresh raspberries
- 2 cups Cool Whip or freshly whipped cream
- 1 small jar of raspberry jam*
Beat cream cheese and sugar until creamy. Add pudding, lemon zest and lemon juice to the cream cheese, blend till combined.
Add milk beat for one minute until all ingredients blend well. Leave it in the bowl for 5 minutes to set.
Divide pudding mixture in half, with the other half fold in one cup Cool Whip.
Pour over a few spoons of the pudding mixture in serving cups, layer with jam and fresh raspberries.
Layer the second layer with pudding/Cool Whip mixture.
Top with cool whip and jam and fresh raspberries.
Refrigerate for 3-4 hours to set.
*I used homemade raspberry jam so it tastes fresh. I am not a fan of store bought jam so if you want that fresh taste, smash some fresh raspberries and sugar, if you want a jelly texture add some cornstarch and cook it till thickens, cool before using.
