I love when we go shopping State side, I always find new things to bake and cook with. This time, I found pumpkin spice morsels by Nestle Tollhouse; they taste like pumpkin pie and they’re orange! I had to try them out for myself, I wish I got more than one bag they are so good! I am excited to share this recipe with you, hope you like these cookies as much as we do! These are excellent cookies to make ice cream sandwiches with!
If you cannot find pumpkin spice chips, you can use white chocolate chips instead. I personally don’t like the combination of chocolate with pumpkin flavours, but if you do, I suppose adding milk or semi-sweet chocolate chips will be okay. Nuts would be another good option.
For the butter, you will notice I ask for cold butter, I have been noticing lately when I bake cookies that are made with cold butter they turn out chewy, soft and not flat. If you prefer crispier edge cookies that flatten out but still soft, then use softened butter.

- 1 cup cold unsalted butter
- 3/4 cup brown sugar
- 3/4 cup sugar
- 2 eggs
- 1 tbsp molasses
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin spice
- 1 tsp vanilla
- 2 and 1/4 cups flour
- 2 tsp baking soda
- pinch of salt
- 1 cup pumpkin spice morsels
Preheat oven to 375.
Cream butter until smooth, add in sugars, beat until fluffy and creamy. Add in eggs one at a time, add in the vanilla and molasses. In a measuring cup, combine flour, cinnamon, pumpkin spice, baking soda, and salt. Pour flour mixture into the butter mixture and mix until well combined. Stir in pumpkin spice morsels.
Line your cookie sheet with parchment or silicon liner and drop cookie dough by 1 tablespoon full, 12 fits at a time.
Bake for 9 minutes. Remove from heat, allow to rest for a minute then transfer to cooling rack.
Makes 2 and 1/2 dozen (approximately)
