I really wanted to make a pumpkin cake…one problem I didn’t feel like baking the pumpkin…peeling and pureeing it just for a cake (lazy day)…
I used canned pumpkin instead and a cake mix! Super easy right?
Really simple to make!
- 1 golden cake mix
- 1 cup canned pumpkin
- 1 tsp cinnamon
- 1/2 tsp or more of pumpkin spice
Follow instructions on box for preparing cake mix, adding the cup of pumpkin to it along with the spices. Bake in a greased 13×9 inch pan at 350, till done, check with toothpick.
I made a cream cheese frosting. I took one 250 gr cream cheese cut into squares, softened in the microwave for one min, beat it in the mixing bowl, and added 4 cups of powder sugar, add 1 cup at a time…beat until smooth. Frost cake when cool. The cake was so delicious and moist, and it really tasted like pumpkin cake…with out all the fuss!
