So this is a upgrade version of my moms potatoes with eggs, the only thing that differs between the two are her eggs are plain, I added the parsley and peppers. Both ways are equally delicious.
I have this posted under breakfast, but this works well for lunch or brunch.
- 5 medium size potatoes peeled and slice them as u would making fries
- 5 eggs
- fresh parsley chopped
- 2 red peppers chopped into small pieces
- salt and pepper
- 1/2 tsp crushed red pepper flakes
In large frying pan, fry the potatoes in some oil, when potatoes are done cooking season with salt and red pepper flakes, drain excess oil or place potatoes on paper towel to soak oil.
While potatoes are cooking, in a separate pan, fry peppers in a small amount of oil, meanwhile whisk eggs and season with salt and pepper, add on top of peppers stir around like making scrambled eggs. Mix the eggs and potato’s together, serve right away.
