This is one of my favourite ways of making potato salad, it’s healthy and delicious!
What you will need:
- 4-5 medium potatoes boiled, cooled peeled and cut into bite size cubes
- 1-2 green onion chopped
- 1/2 red bell pepper chopped
- 3/4 cup fresh parsley chopped + 2 tbsp dried parsley
- a hand full of cherry tomatoes or 1 small tomato chopped
Mix all ingredients in salad bowl, and season with oil, vinegar and seasonings. Serve fresh, store in fridge.
For dressing, you will need olive oil and vinegar.
For seasonings I use: 1/2 tsp seasoning salt, 1/2 tsp salt, a pinch of garlic salt and a pinch of paprika. Taste and season to liking.
