Potato salad with avocado is so delicious, creamy and tasty with no mayonnaise. I love this salad, it is a family favourite.
You can taste and adjust the lemon, vinegar and salt to your personal liking.
What you will need:
- 2 ripe avocados
- 5 Yukon gold potatoes
- 1 tomato
- 2 green onions
- 1 English cucumber
- 1/2 red onion
- 4 radishes
- olive oil
- lemon juice
Boil potatoes and cook until a fork or knife goes through, takes about 45- 55 minutes.
Cool potatoes, and peel.
While the potatoes are boiling, prepare the vegetables. Cut and dice all the veggies, partly peel the radishes, you don’t want the red to change the colour of the salad.
Peel avocado, and squeeze lemon juice over the avocado and sprinkle salt, this helps prevent the avocado from browning.
Once potatoes have cooled down, cut into bite size pieces. Dice one avocado, and mash the other. Combine with cut vegetables, adding the diced and mashed avocado last. Season with lemon juice, vinegar and salt. Refrigerate until you are ready to serve.
