I grew up eating polenta in a bowl with sugar…now a days I eat my polenta a little differently, mind you if you give me a bowl of sweet polenta today, I would still wolf it down with a couple spoons of sugar just like I did when I was a kid;) This dish has become a family favourite! Its a perfect summer side dish or even on its own for lunch.
You will need:
- 1kg tube of polenta (found at your local Mediterranean store or Mediterranean section at your local grocery store) Cut into 1/2 inch slices
- bocconcini ( I get mine fresh from the cheese factory)
- 2 tomatoes
- 1 small onion
- fresh basil
- olive oil
Depending on how many your making is how much ingredients you will need. Dice the tomatoes and onion, chop the basil. Combine all together drizzle with olive oil and season with salt. In a fry pan, add a little olive oil; heat the oil, cook polenta on both sides until edges become a bit crispy. Slice the bocconcini and add 2- slices over the polenta, cover for about 1 minute so the cheese slightly melts. Transfer to serving dish and top with diced tomatoes. Serve right away. Enjoy!
