Another treat that I liked when I was a kid was this pistachio mallow salad, not sure if it’s because it’s green and what kid doesn’t like green food, or because I loved anything with fruit and marshmallows!
This is another recipe from my Aunt Angela’s collection. It’s so simple to make, and makes a pretty dessert.
What you will need:
- 2- pkgs pistachio instant pudding
- 2- 398 ml pineapple pieces (chunks) or tidbits with juice
- 2-3 cups mini plain marshmallows
- 1 tub of cool whip
Pour the pineapple pieces along with the juice in a large mixing bowl, stir dry pudding mix right in. Stir in the cool whip and then stir in the marshmallows. Transfer to a large serving bowl or individual dessert bowls. Refrigerate until ready to serve. Enjoy!
Garnish suggestions: ground pistachios, coconut, walnuts, pecans, pineapple.
