Albanians love their peppers and feta…oh and bread! I still remember every fall my grandparents stocking up on peppers and roasting them, and then freezing them for the winter.
Cubenelle peppers are my favourite and great pan fried with feta. Bell peppers are great pan fried, roasted or grilled….and of course feta makes it even better!
I love eating my peppers and feta with a fresh loaf of Italian or French bread, just like that with a cup of tea and i’m good to go.
It also goes well with a bagel, I like to add a sunny side egg to it.
What you will need:
- 2-3 bell or cubenelle peppers
- Feta cheese
Toast and butter you bagels. Pan fry the peppers in olive oil or canola oil. Season with salt not too much as feta is salty!
Set aside and cook your eggs in the same pan.
Put it all together and you have a good filling breakfast to get you ready for your day!
