I made peach ice cream, in the middle of the night! One of those summer nights where I just couldn’t fall asleep, thought I would be creative with the peaches I had left, I had about 8 peaches in the fridge. They were getting to soft, I don’t mind soft peaches, but my kids do.
I didn’t have enough to bake with, my mom told me earlier that day that I should make ice cream. Glad I did, it turned out great, and so easy to make. I pureed the peaches in my mini food processor, left it a little chunky, you can puree it to any texture you like.

What you will need:
- 2 and 1/2 cups peach puree, 6-7 peaches
- 3/4 cup sugar
- 2 cups of heavy cream
- 1 tsp vanilla
Peel, cut and puree the peaches, combine with sugar, cream and vanilla, stir well and set in fridge for 4 hours or over night.
Pour into frozen ice cream bowl and let it run for 20 minutes, until thickened. Scoop out and transfer to a freezer safe container. Freeze for 2 hours before serving or you can enjoy it soft serve as soon as its done. Enjoy!
