We love this pasta salad, it’s the perfect side dish with your summer BBQ dinner or something to bring to a potluck, you may want to double the recipe if your taking it to a potluck.
I love to make this with the dried oregano that’s from my herb garden, it tastes so much better than the store bought. I just pick the oregano, allow it to fully dry and store them in a tight lid container.
I don’t really measure the amount of oil, if I feel the need, I add more. If your adding more oil and vinegar remember to season with oregano and garlic salt.
What you will need:
- 1pkg veggie or plain rotini or fussili pasta
- 1 red bell pepper cut into small pieces
- 1 zucchini cut into pieces
- olive oil
- apple cider vinegar or white vinegar
- 1 tsp or more of dried oregano
- 1/2 tsp garlic salt
- feta cheese
Bring the pasta to boil in salted water cook until done. Sautee or grill peppers and zucchini until tender, season with salt and pepper.
Boil and drain the pasta, mix in large bowl with veggies.
In a cup add 5 tbsp or so of olive oil and 1-2 tablespoons of vinegar, add the oregano, garlic salt and mix, pour over the pasta and stir. If you need more dressing repeat until you are satisfied with it.
Add feta cheese , the cheeses will slightly melt ( my favourite part). Crumble some feta on top of pasta before serving. Enjoy:)
You can use Italian salad dressing if you wish, you will still need to use olive oil and vinegar as you don’t want a dry pasta salad, I sometimes add a spoon of mayo for creaminess.
