Oreo Cookies…where do I begin? I never been a fan of them to tell you truthfully….I always preferred chocolate fudge cookies…or even better homemade cookies! All of a sudden this past month I have grown to love this cookie! Its the only store bought cookie that I ever buy as its the only store bought treat my kids ask for! Last week I made an Oreo cake and I loved it, I made one last year…didn’t care for it much…but this time around it was different…I actually really enjoyed it!
Since I had some leftover cookies I decided to use them up and make these yummy pancakes! You can be more fancy than I and serve them with whipped cream, if I had any I would have squeezed some on top….mmm sounds so good!
What you will need:
- 1 egg
- 1 and 1/2 cups buttermilk*
- 1 1/2 cups all purpose flour
- 2-3 tbsp oreo cookie crumbs* (you can add more if you like)
- 1 tbsp sugar
- 1 tsp baking soda
- 3 tsp baking powder
Add egg, and buttermilk to the dry ingredients.
Stir only until blended. Gently fold in the cookie crumbs.
Heat your non stick pan or cast iron pan.
Using a ladle, spoon batter onto hot pan or griddle and shape into a circle. Cook on 1 side until small bubbles appear. Flip and cook the other side.
*You can make your own buttermilk with milk and 1 tbsp vinegar
*To save on calories use Oreo cookie baking crumbs instead of Oreo cookies
