My kids favourite cake is Oreo cake, so when an occasion arrises I make it for them, and for me haha! To make it extra festive I add colour to the icing, this is of course optional.
For this cake you will need:
- 2 cups flour
- 3/4 cups unsweetened cocoa powder
- 1 cup sugar
- 1 cup golden yellow sugar (light brown sugar)
- 2 eggs
- 1 tsp vanilla
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 cup hot coffee
- 1 cup milk
- 2 tbsp vinegar
- 1/2 cup oil (I use sunflower oil)
In a mixing bowl, add in all the dry ingredients and stir together with a whisk.
In a bowl add in the milk and stir in the vinegar to make buttermilk, add in the egg, oil, vanilla, whisk together and pour into the dry ingredients in the mixing bowl and mix until blended, while stirring pour in the coffee slowly, this will thin the batter out.
Mix until well blended.
Pour into 2 greased 8 inch pans that are lined with parchment paper.
Bake at 350 for 30 minutes, check your oven at 25 minutes, for my oven it takes 30 minutes.
Cool cake completely before icing cake.
For the icing:
- 1 cup softened unsalted butter
- 4 cups icing sugar
- 2 tbsp milk
- 3- 4 Oreo cookies crumbled up
- dash of salt
- food colouring if desired
Crumble cookies using a mini food processor or something that crushes the cookies well.
Cream the butter and add in the icing sugar, add in 1 tablespoon of milk and then add more as needed, you made need two or three tablespoons of milk, whip up until fluffy and creamy.
If you want to colour the icing do this now, but save some some on the side for the piping on top about 3-4 tablespoon worth.
Gently stir in the crumbled up Oreo cookies, a spoonful at a time. The more you add and the more you stir the frosting will turn grey. So if you don’t want it to turn grey, add less and stir less.
Frost the cake with the icing, and add a thin layer when stacking, this cake doesn’t have a lot of icing or extra icing, it has the perfect amount of icing in my opinion. Pipe the ‘grey’ icing on top and garnish with chocolate chip cookies and Oreo cookies or just Oreos.
