My hubby loves a good omelette! I like to make it with veggies, but when I don’t have all of them on hand…I make it with peppers and feta as I usually have that around!
What you will need:
- 1 red pepper cut up into small bite size pieces
- 1/2 cup milk
- 1/2 cup feta cheese crumbled
In pan heat 3tbsp olive oil, add peppers cook till peppers soft and browning on edges. Whisk eggs and milk, add on top of peppers cook on med-low , sprinkle feta cheese on top, cook till set, you may cover if you like to cook faster. You may flip over half moon or cut into wedges
