I made this engagement cake Friday, it took me 2 days to make! The bride asked for Navy blue and white, so I cannot take credit for the colour choice! I have to admit she sure has good taste!
The bottom layer is a 12 inch chocolate cake with custard filling, and the top is 8 inch vanilla cake with custard.
I really appreciate bakers hard work on chocolate cakes, they’re not the easiest cakes to work with! The crumb coating itself takes time and patience! I think I did a good job covering it up. If I had the talent working with fondant I would have covered it, but I dont! I love the look of fondant cakes, but not the ones with bubbles, and that’s exactly what would happen if I tried…so there was no going there!
I don’t know if it was too dry in my house or what, 60 of my royal icing flowers cracked, which is the reason for making so many….you never know what can happen! Oh and did I mention Navy blue is not the easiest colour to make, but well worth it!
I had made 5 fondant roses that were cracking on me, so I went and made the daisy’s for the top part instead. I liked how it turned out in the end. I think the cake is simple yet elegant.
This was my first time working with ribbon, my concern was the ribbon bleeding into the buttercream, so what I did was make a ribbon out of fondant first, then dipping the ribbon into water and squeezing the liquid out, I read somewhere that’s what you do, so the ribbon sticks to the sugar. Then wrapped the ribbon on top of the fondant. I love the look of ribbons on cakes, and now that I have done it, I will most likely do it again on other cakes!
