What you will need:
- 1 thawed pkg filo
- 1 – 750 gr cottage cheese
- 1 bag spinach
- 1/2 cup crumbled up feta cheese
- 1 egg for filling
- salt
- 1 shallot or small onion
- 1/4 cup salted butter
- 1/4 cup olive oil
- 1 egg
Rinse and dry the spinach well, using a salad spinner or paper towel.
Chop the onion and mix in with the spinach, feta, cottage cheese and egg. Season with salt, keep in mind that feta is salty.
Melt the butter and combine with oil and whisk in 1 egg.
Take two sheets of filo dough, sprinkle some oil mixture over and spread some spoonfuls of filling across and roll up, then roll like a spiral and place on a baking pan. Spoon over the melted butter mixture over the rolls.
I like to use parchment paper on the pan for a easy clean up.
Bake at 350 for 30 to 40 minutes. If it is watery, soak it up with paper towel, then when you remove it you can place them over paper towel to absorb the liquid.
It doesn’t always get watery, but sometimes it happens and it’s ok.
