My family loves when I make them apple pie…..thing is I like Dutch apple and my hubby likes a pie crust on top! Kids like both, so this way is perfect! Making them into individual pies makes everyone happy! I make them in a Texas muffin pan, if you don’t have one I am sure a regular muffin pan would work.
You can use your own pie crust recipe for this as well, any pie crust will work:)
What you will need:
- 6-7 apples
- 1 tsp cornstarch
- 2/3 cups brown sugar
- 1/2 -1 tsp cinnamon
Pie crust:
- 3/4 cup cold unsalted butter
- 2 cups all-purpose flour
- a dash of salt
- 3 tbsp buttermilk
For streusel topping:
- 1/2 cup brown sugar
- 3/4 cup flour
- a few spoons of oil
- a dash of cinnamon
For apples: Peel, core and cut into bite size pieces. Combine with cinnamon, brown sugar and cornstarch.
For dough: Combine butter with flour and break up with hands till crumbly, add the buttermilk and salt form into dough.
For streusel: Combine brown sugar, flour and drizzle oil till becomes streusel like texture.
Divide dough in 6 balls, roll pie crust out on a floured board, add to the muffin pan, trim edges and fill with apple filling. Cover with strudel or pie dough and make a lattice crust over the pies. Bake at 350 till crust is golden brown. Makes 6 pies
Love this idea! My favourite is Dutch apple pie too!
