This is family favourite salad that I make all throughout the summer, it best in the summer as the tomatoes are the juiciest and are in season. Get some nice bread, a Calabrese or French loaf goes lovely with this, with some tea, cheese and some olives you will have a wonderful lunch or light dinner.
What you will need:
- 2 large tomatoes
- 1 large cucumber
- a few slices of a onion
- 1/2 bell pepper (any colour)
- extra virgin olive oil
- salt
- parsley (optional)
- vinegar, lemon or pomegranate sauce (nar eksisi)
Clean your vegetables, peel and cut up the tomato and cucumber. You can use red or white onion, just slice some up for the salad, you can use whatever colour bell pepper you have, red and green work best.
For the acid you can use what you have, we like this with pomegranate sauce/syrup, it’s like balsamic vinegar but it’s made with pomegranate, it is sour and goes nicely with this, but lemon and vinegar go great as well if you can’t find the sour pomegranate syrup.
Drizzle with olive oil, be generous as you don’t want a dry salad, add the lemon or vinegar and season with salt. You can add parsley if you have as well.
Taste and adjust as needed before serving. This gets really juicy, enjoy dunking your bread in all that goodness!
