I was asked to do a Little Mermaid cake from a friend of mine, for her daughter. I was excited as she is my favourite Disney Princess. I needed some inspiration so I watched the movie.
At first I thought the dolls legs bent but they didn’t, so as I wrapped her legs in fondant making a tail, I placed her gently on the cake. I then proceeded to decorate it. I love the colour of blue for the water and all the colours of the decorations, they look great together. I was happy with how it turned out:)
I made a vanilla cake with White Swans cake flour, I found the cake a bit dry for my liking. But with the buttercream and ice cream it made up for it.
I used Wilton Teal Colouring Gel for the water and for the coral I combined red and orange Wilton Gels.
Made flowers with Wilton ready made fondant using a variety of colours, I got some shell and flounder decorations at Micheals, as for Flounder I used my daughters toy!
You need 2 -9 inch cakes vanilla works best, you don’t want chocolate crumbs in the icing unless your a pro;) You will also need 2 -6 inch cakes for the top part, that you will have to cut 1 of them in half as seen in the pick. I made my own buttercream frosting for decorating.
