Lentils and rice is a popular Middle Eastern dish known as mujadara. It’s simple to make and it tastes really good, and it’s good for you too! When I was a kid our Palestinian neighbour would make this and send it over all the time, I always think of Najwa when I make this, she was the best cook and always shared food with us.
What you will need:
- 3/4 cup brown lentils
- 3/4 cup parboiled rice
- 5 1/2 cups water
- 1 large red or Spanish onion
In a medium size pot, boil lentils in water let cook on medium heat till 1/4 up to 1/2 of the amount of liquid is gone, add rice and cook on low covered till rice is done. Add salt to season when you add the rice.
Meanwhile saute 1 sliced onion in olive oil and cook till caramelized, add on top of rice and lentils when done cooking. Enjoy as a side or on its own.
