A couple months ago I tried this delicious lemon cake, the frosting was so light and fluffy. I tried to make it at home, but I haven’t been able to come with a good recipe…yet! I did come up with a delicious frosting though, simple and easy to make.
Usually my buttercream is a bit on the thicker side, so I had to think fluffy! Not the whipped cream kind of fluffy either, a different kind of fluffy! Like a light buttercream…the kind you can just eat from the spoon like a dessert!
This was like the best buttercream frosting I ever made! It was fluffy, soft and so delicious!
You can use salted or unsalted butter for this recipe!
As for the milk I didn’t measure it, I just poured it over until I was satisfied with the texture, I would say about 1/3 – 1/2 cup in all.
You can add a splash of lemon juice in there as well!
What you will need for lemon frosting:
- 1/2 pkg lemon flavoured instant pudding
- 3 cups icing sugar (powdered sugar)
- 1 stick softened butter
- 1 tsp lemon zest
- milk or cream (approx 1/3 – 1/2 cup)
Whisk butter in mixing bowl until light and creamy. Add in 1/2 pkg of pudding mix, and 3 cups of icing sugar and lemon zest.
Pour in the cream or milk lightly, beat and continue to pour milk in slowly until desired texture.
Frosting is ready to spread over your cupcakes or cake! Enjoy:)
Makes enough frosting for 24 cupcakes.
