This is a great cake to make when you are expecting guests! It looks impressive and tastes great!
One of my favourite recipes is Zesty-Lemon-Pound-Cake by verybestbaking I have made it many times….and it never fails me!
You can also make it another way that I enjoy as well, its not a pound cake, its a moist cake , which I am sharing with you today!
You can use orange juice and zest if you prefer. Both go great!
You can make a cream cheese glaze or you can cover it with a regular glaze or even whipped cream! Anything goes really…I like to cook and bake with what I have in the kitchen….makes life simpler! 🙂
What you will need:
- 1 box vanilla cake mix or from scratch
- 1 can condensed milk
- 1 tbsp lemon zest
- 1/2 juice from a lemon
- 2 cups icing sugar
- 1/2 pkg softened cream cheese
- 1/2 tsp lemon zest
- 1 tbsp lemon juice (or more till you get the right consistency)
Combine the lemon zest, lemon juice and condensed milk, stir well. You may need more lemon juice if you find it too thick.
Follow instructions on cake mix or follow from scratch recipe, grease and flour bundt pan. Bake at 350 for 40- 45 minutes or till cake is done, check with tooth pick.
Cool in pan for 5 minutes, poke holes with butter knife and spoon over half of the condensed milk mixture. Wait 5 minutes for it to soak in then transfer to serving plate.
Poke holes on top of cake and spoon over remaining condensed milk mixture.
Prepare the glaze in a deep bowl, with whisk or spoon. Drizzle the cake and decorate with fresh flowers or herbs. You may ice the cake with whipped cream if desired. Enjoy!:)
