I was in need for a quick and simple dinner tonight, I didn’t make much, this recipe is good for 2-3 people.
- 4 small boneless skinless chicken breast (frozen or fresh)
- a few tsp Greek seasoning by Club house
- 2-3 tbsp lemon juice
- 1/2 cup uncle bens rice
In a deep pan add chicken pieces squirt the lemon juice and sprinkle the Greek seasoning on top each piece. Cook under low-med heat, cover with lid. Steam will cook the chicken if frozen, you may need to add some water to make steam if the chicken is fresh. When chicken is done, remove. Their will be a little over 1/2 cup of liquid in there from the juices, add rice and another cup water, season with salt.Cook on low heat covered, add the chicken back to the pan when rice is almost done cooking. keep covered till done,serve with salad.
