These leeks are fresh from my garden, what a difference it makes in taste! I like this dish on its own, but my hubby likes it with yogurt on the side. It is customary to add a few spoons of cooked ground beef to the dish while cooking, it is totally optional, I do as that is what my Mother in law does.
This is a Turkish dish simply called pras meaning leeks, in Albanian it is called presh, same word with an added h in the end.
- 3 leeks, cut into small chunks
- 1 carrot, sliced
- olive oil
- 4 kitchen tablespoons of rice
- salt and pepper
- 1/2 a lemon
In a 2 qt pot, add the chopped leek, carrot, and rice fill with water just enough to cover the leek ( do not fill pot with water). Add a few tablespoons of extra virgin olive oil.
Season with salt and pepper, cover and cook on medium heat till rice is cooked and leeks and carrots are tender. At end squeeze a bit of lemon juice to liven up the flavours.
