Kisir is a Turkish bulgar salad like tabouli but prepared differently; I find it to be much more filling. This is great as a side dish or on its own for lunch or a snack.
What you will need:
- 1 and 1/2 cups fine bulgur
- 1 tomato
- 2 green onions
- 1 cup chopped parsley
- 1/2 green pepper
- 1/2 cucumber or 2 pickles or both
- juice of 1 lemon
- 1 tbsp pomegranate molasses (optional)
- 1 onion or shallot
- 1 heaping tbsp tomato paste
- 1 heaping tbsp pepper paste
- salt and pepper
- olive oil
To prepare the bulgur, simply place it into a large bowl and pour about 3 cups of boiling water over it, then cover and let it sit for about 5 minutes, or until it is doubled and bulgur is softened. If it is a bit hard, add more boiling water. You may drain extra water if there is any left.
Transfer to a large mixing bowl. Chop all veggies into small pieces and set aside.
In a pan, cook down the chopped onion with the tomato paste and pepper paste in some olive oil. You can use only tomato paste if you don’t have any pepper paste. Cook until onion has softened.
Add this onion mixture to the prepared bulgur, toss in the chopped veggies, squeeze in the lemon juice, add salt to season, some olive oil and pomegranate molasses if you choose to use it. If you like you can add some black pepper to it.
Adjust seasoning before serving. Keep refrigerated.
