We love our rice, our favourites are Jasmine and Basmati, you can use either one for this dish. Its super easy to make and goes great with beef or chicken.
What you will need:
- 1 and 1/2 cups Jasmine rice
- 1 and 3/4 cups water*
- 1/4 tsp turmeric
- Salt to season
- 1 green bell pepper
- 1 red or orange bell pepper
- 2 shallots
- 1 container of mushrooms
- butter and olive oil
Rinse rice and melt a tbsp of butter in a 2 qt pot, and add 2 tbsp of olive oil and turmeric and fry the rice for a few minutes, then add the water and salt. Cover and cook on low heat till cooked. Remove from heat and leave covered for 10 minutes.
Meanwhile chop veggies and pan fry with 1 tbsp butter and some olive oil, season with salt and pepper. Serve on top of rice. Enjoy!:)
*Approx amount of water, an easy way to measure the water is to use the knuckle test,the water should come up to the first joint of your knuckle…learned that from Ming Tsai:)
