The first time I had this dish was at a dinner party at my friend Candan’s many years ago, I loved it so much and learned how to make it. It’s a very popular Turkish dish, it is easy to make it at home and very delicious. My kids love when I make this, it is now a family favourite.
What you will need:
- 3 lbs of cubed beef or kabob meat cut into small chunks
- olive oil
- 3 onions
- 6 piece’s Greek pita or thick pita
- 2 cups Balkan or 3.25% or 5% Yogurt
- 2 tbsp melted butter or olive oil
- 1 tsp paprika
- tomato-sauce (if you have fresh homemade, not canned)
Grate or shred onion in food processor or by hand with a grater. Using cheese cloth squeeze out the liquid and discard the onion pieces (or you can use your hands or strainer), add the onion juice in a big plastic bowl and add 6 tablespoons or more of olive oil, add meat and mix with your hands; cover and marinate in the fridge over night or for at least 4 hours.
Add the beef in a large pot, cook for 2 and 1/2 to 3 hours on low heat until meat is tender. You can do this in a slow cooker as well, meat becomes really tender.
Cut pita into 1 inch squares, drizzle with olive oil and toast in oven or pan until lightly toasted.
In a pan melt butter and mix with paprika, if you have fresh tomato sauce you may drizzle that on top as well, it goes very nicely.
When ready to serve get a big enough platter like 13 x 9 size pan or individual plates. Place lightly toasted bread on bottom spoon over the yogurt then add meat on top then drizzle with butter paprika and fresh homemade-tomato-sauce.
Do NOT make ahead of time, prepare when ready to serve other wise the pita will get soggy.
Also tell the butcher you want tender meat when purchasing, I always tell them what I’m making and to give me the best cut of beef.
