I like to call this lazy lakror! I’ll tell you why….Lakror is an Albanian style pizza that is made with many thin buttered layers of dough, takes a lot of effort and upper arm strength! My mom is a pro at it…..me not so much…I have made it a couple times but I prefer filo as that is straight out of the freezer!
I love the taste of meat filled lakror but too lazy to make it! This is like a soft taco with an Albanian twist! There is something similar to this in Turkish cuisine called lahmacun but the meat is spread on the bread and cooked or left raw, I do enjoy making it that way as well! Both are delicious!
If you choose to spread the raw meat mixture on first, you can use store bought pita or homemade, cook meat side down on pan or grill or you can steam cook it, that is what I do, I don’t like raw meat.
Flat bread:
- 2 tsp salted butter
- 2 cups unbleached all purpose flour
- Approx 3/4 cup warm water
- 3/4 tsp salt
- Melted butter or oil for pan frying.
Crumble the butter with flour together and mix in the water pour slowly and knead till you get a soft and smooth textured dough. Let rest 10 mins. Pull dough to make small balls, flour the surface and roll out into small circles will make 12 flat breads.
Heat pan ( I used my cast iron pan for this) add either butter or oil to pan or brush bread with pastry brush, and cook flat bread on both sides.
For meat filling:
- 1 lb ground beef
- 1 tomato
- 1/2 green pepper
- 1 onion or shallot
- 1/2 cup of freshly chopped parsley
- salt and pepper
- 1 tsp oregano
- 1 tsp paprika
- 1 tsp tomato paste
Heat some oil in pan, add chopped onion, pepper, and tomato and tomato paste cook till tender add meat break into small chunks cook till meat is no longer pink. Season with salt and pepper, add parsley and oregano. Taste and adjust seasoning, if you like you can add spices of your choice to it.
Put it together:
Take each flat bread and fill with meat filling fold over, enjoy:)
