I love my bread! My whole family does! Albanians are known for their love of bread and cheese! Buke me djathe as we say! I even found a FB fan page called ‘like if you grew up with buke me djathe’! Well it had a longer title than that but you get the point!
I came across this recipe while on my quest to find homemade white bread! I found it on All recipes at first, then an adaptation of it on amandascookin.com! I choose to follow hers as I like following adaptations as I now it has been tested out…and it was awesome!
My reason for wanting to make my own bread is to avoid what is being added in breads! It made me kinda scared….we eat bread everyday…we shouldn’t have to worry about whats in it! Bread is simple and should be made from simple ingredients! Ingredients to be avoided are, Azodicarbonamide and Potassium bromate, any artificial colours and or preservatives!
Bread should be made of for the most part; yeast, water, flour, oil, sugar and salt….sometimes vinegar. Read the ingredient list and try to get bread that has the least ingredients! Read the labels! I finally found some bread that actually state that they are free from artificial preservatives and colours, etc…which is great for me as I don’t think I could bake bread in the summer heat!
For the most part I followed Amanda’s recipe, I basically made it the way I make my pide, in fact pide-dough is similar to this bread, only this has more flour and less oil.
The first time I tried it, it worked out great, the second time was too dry…not sure what could have happened. This time around I added 1/2 a cup less flour and it worked out! It only made 2 pans though! Strange sometimes when working with dough it can turn out differently even though its the same recipe!
This is my adaptation from Amanda’s homemade-amish-white-bread!
What you will need:
- 1 cup warm milk
- 1 cup warm water
- 6 cups bread flour
- 1/3 cup sugar
- 1/4 cup oil
- 1 tbsp and 1/2 traditional yeast
- 1 and 1/2 tsp salt
- oil for kneading
- 2 tbsp melted butter
In bowl stir together the warm milk and sugar till sugar is dissolved, add in the yeast and set aside, takes 3-5 minutes for it to foam. When it does foam add in the warm water and oil to it. Add the salt to the flour and add to the liquid, I would add 5 and 1/2 cups first and if its still sticky then add the remaining 1/2 cup! Drizzle with oil assuming your making the dough in a bowl, so that it doesn’t stick to sides.
When dough is formed grease bowl, cover with cling wrap and a kitchen towel. Let rise for 1 hour or till doubled in size. Punch hole to let air out.
Grease 2 loaf pans, I used 2 8 inch loaf pans and 1 round 6 inch pan, while hers is in 2 -9.5 inch pans, what ever pan you have will work!
Divide dough and place in pans, allow to rise again, when risen bake in oven at 350 for 30 mins.
When you take the bread out, brush each loaf with the melted butter, it softens the crust.
Let rest in pan for 10-20 minutes before removing….trust me it makes it easier to remove! Enjoy!
