Grilled veggies are the best, I just love them! You can add feta cheese if you like, or cubed Spanish cheese, the kids will love that. If they are like my kids, they will love it with garlic yogurt sauce, even on its own it is very delicious.
What you will need:
- 1 of each red, orange, yellow pepper
- 2 medium sized zucchini
- 1 eggplant
- 1 tomato
- 1/2 cup freshly chopped parsley
Slice the eggplant and zucchini in 1/4 inch width long ways. Place zucchini and eggplant flat on a baking sheet, brush with olive oil and sprinkle salt on both sides.
Place the veggies on hot grill, cook till tender.
Remove; cover peppers with foil so that the steam helps remove the skin. Cut into bite size pieces.
Cut up fresh tomato, mix altogether in a large bowl, add parsley.
Drizzle with olive oil season with salt, you may add a few tablespoons of Italian or sun dried tomato dressing, for more flavour if you desire. I usually just use a little vinegar with olive oil. You may crumble the cheese and add it now if want.
Serve warm or cold. Enjoy!
