My mom always made me orzo when I was a kid it was one of my favourite pastas, I ate it with ketchup, oh how I loved ketchup! Well as I matured so did my palate. Now I enjoy orzo many other ways, including my favourite with grilled veggies and feta cheese! Finally I eat exactly what my mama makes, yes this is her recipe!;)
What you will need:
- Orzo about 1/2 of a 500 gr bag
- 2 zucchini cut length wise 1/4 inch thick
- 1 eggplant cut length wise 1/4 inch thick
- 1 red, 1 orange, 1 yellow pepper ( you can use one colour if you want)
- fresh parsley chopped for garnish
- 1 cup crumbled feta cheese
- olive oil
- vinegar or salad dressing
- salt to season
Place all the cut up veggies on a baking sheet, and brush with olive oil and sprinkle with salt, place veggies on barbecue or grill. When peppers are done cooking, cover with foil, allow to rest for 10 minutes. Peel the skin off the peppers, and cut all the veggies into bite size pieces.
Boil orzo, drain and rinse with cold water, drain and place in serving bowl.
Combine the orzo with grilled veggies. You can make your own dressing with olive oil, salt, garlic salt and dried oregano, a little vinegar if you like, or you can use Italian salad dressing. Combine with the dressing, you don’t need a lot, just enough to season and dress up your salad.
Crumble feta cheese and combine and save some for the top, garnish with some fresh chopped parsley. Enjoy warm or cold.
