Ever wonder what to do with your leftover roast beef, cooked stew meat, ground beef or lamb? I always add leftover cooked meat to stews or rice and make a whole new dish with it. You can always come up with a new meal with leftover meat. You can make this over the stove top, or bake it in the oven in a dutch pot or use a slow cooker. All methods work great, and I use all of them.
When making pot food, you just throw whatever in there and as long as it is properly seasoned it will taste delicious! Homemade cooking is easy when you have the right ingredients.
You can use frozen or fresh beans, frozen beans do cook faster in my experience.
For this dish I used leftover roast beef, so all you have to do is cut it up in chunks.
What you will need:
- 2 lbs fresh green beans (approx) or a bag of frozen beans
- leftover cooked meat
- 1 small onion
- 4-5 small potatoes
- 1/2 red pepper or 1 tbsp red pepper paste
- 1 tbsp tomato paste
- olive oil
- salt
- paprika for colour
- black pepper or red chili flakes if desired
- approx 3 cups water
Snap ends off of beans, cut into half. Rinse well, I usually pour hot boiling water over the beans to make sure they are clean. If you are using frozen beans just throw them in the pot from the bag.
Peel potatoes, and cut into quarters, keep them in water until ready to use to prevent browning.
In a cooking pot, add a few tablespoons of olive oil and add in the chopped onion, after a few minutes add in the tomato and pepper paste, diced pepper if using.
Cook until it becomes fragrant. Add more olive oil as needed.
Add in beans and potatoes, season with pepper, salt and paprika.
Pour over the water, you may need more than 3 cups, there should be enough liquid to cover the vegetables. Bring to a boil, and cook on medium heat with the lid on, when almost done add the leftover roast beef to the pot. Taste and adjust seasoning.
It is done when the potatoes and beans are soft.
Simple and delicious, serve with plain rice if desired.
