Green Beans with Olive Oil – Zeytinyagı Taze Fasulye in Turkish, is a simple and tasty vegetarian dish, you can serve with rice on the side and plain yogurt. You can make this with a large amount of beans or a small amount, just add water as needed.
What you will need:
- fresh green beans or flat green beans
- 2-3 tbsp red pepper paste*
- 1 tbsp tomato paste
- 1 carrot
- 1 onion
- salt and pepper
- extra virgin olive oil
Rinse beans, cut ends and cut in half or three parts depending how long the bean are. I like to boil the beans on their own first, they cook better that way. What ever you do, do not add salt!
Once beans are no longer bright, they are ready. Drain.
Add chopped onions to a pan with olive oil, add in the pepper paste and tomato paste. Add in the beans, fry in the oil for a little bit. Pour in about 5 cups of water.
Cover and let simmer on medium heat until beans are soft and tender. Season with salt and pepper half an hour before done cooking. Serve with rice, enjoy.
*If you don’t have red pepper paste, you can use a red bell pepper and use more tomato paste.
