It’s a winter wonderland! My girls are December babies and just love winter! We had a winter wonderland/Frozen themed party this past weekend and the girls had a blast! My youngest daughter was in on the surprise and helped make the cookies, it was the first time making royal icing, decorating cookies and making gingerbread cookies, I also made homemade marshmallows this week. It’s been a week full of new adventures and I am really happy with the new recipes I have learned, and will continue to make.
Adaptation from McCormick and Food.com
What you will need:
- 3 cups flour
1 tbsp ground ginger
1 tsp cinnamon
1/4 ground nutmeg
1/4 ground cloves
1/2 cup or 1 stick softened unsalted butter + 2 tbsp
3/4 cup dark brown sugar
1/2 cup molasses
1 egg
1 pkt vanilla sugar or 1 tsp vanilla extract
Combine and whisk the first 6 ingredients together in a bowl. Beat butter and sugar till light and fluffy. Add in molasses, egg and the vanilla. Add in the dry ingredients and beat till cookie dough forms. Refrigerate 4 hours or over night.
On a lightly floured surface, roll dough to 1/4 inch thickness and cut with cookie cutters. Place on a parchment paper lined baking sheet. Bake at 350 for 8 minutes for a soft cookie, 10 minutes for a crispy cookie, cool on cooling rack. Decorate with royal icing if desired.
The cookies were a hit! The kids loved the gingerbread and the sugar cookies, was all worth the effort!
For the royal icing I used sweetopia royal-icing-recipe. I recommend watching decorating with royal icing videos if you are decorating like me for the first time. I learned some good tips, such as thinning out the icing and using a candy melt squeeze bottle. As for the chocolate hats, I added a little cocoa in a bowl and and made chocolate icing with the royal icing.
We made these cute snowmen, stars and snowflakes, decorating with royal icing for the first time I guess I didn’t do so bad, hope that practice makes perfect. I hope to get better at outlining, the icing is a bit stiff and your hand starts to hurt after a while. I made sure I had a damp tea towel over the icing so that it doesn’t harden, I also had wet paper towel in each cup for the pastry bags, the tips would harden at times, just poke through with a toothpick.

I dipped the marshmallows in melted blue candy melts, and then dipped them in a variety of sprinkles.
For the rice krispie treats, I melted blue candy melts and drizzled the squares and decorated them with snowflake sprinkles, blue and white sugar crystals and white ball sprinkles.
For these Oreo snowflakes, I melted a bag of white candy melts and added 8 broken up Oreo cookies, I used a snowflake mold. Poured over the mixture and allowed to harden in the fridge for 10 minutes, I made two snowflakes.
