I made this cake for a small wedding yesterday! My inspiration was the berries. Instead of making the same old flowers and roses, I decided on fresh summer berries….after all it is summer time! I only wish I had my hands on some red currants… unfortunately they don’t come in Ontario until mid July, that is where the cherries came in to play.
I am sharing this with you as an inspirational post. This is a lovely cake if you choose to make it yourself. It was less stressful for me as a cake maker, making roses and flowers can get a little nerve wrecking! Sometimes they crack if too dry, or melt if too soft…and not to mention the pressure on my hands! I have a little arthritis in my right hand so this cake was a treat for me to make.
My cousin Johnny gave me some edible flowers to use for decoration, I used some of the white ones along the edges, you don’t have to add the flowers that was just extra.
Firstly when making a layered cake, seal in the filling! I will show you an example. I first fill the cake and then pipe around the edges sealing it in, that way the filling doesn’t come out when icing the cake. Or you can pipe in the edges first then fill, what ever you find easier to do.
When decorating with fruits the only tricky thing is that they can get soft and mushy on you, berries are very delicate! I got my strawberries locally at a farm that does not use pesticides, the other berries were organic as well.
You can’t really rinse the raspberries if your going to decorate with them, they will get mushy and bleed onto the icing…so try to get fresh local berries if possible and ask the farm if they use pesticides!
If your getting your fruit a day in advance, remove from container and store in a colander, berries need air to prevent them from spoiling. I was super nervous so I got the rest of the berries the day of. If that is possible for you to do, that would be your best bet! My fridge at times freezes them, so that was another concern.
When icing my cake, I do a crumb coating set in fridge till icing hardens and then do the final coat. Vanilla cake is always a pleasure to work with., as much as I love chocolate cake you have to do multiple coatings as it does get crumby. So have extra icing on hand.
After icing the cake start to add the berries. Make sure you do it last minute so that cake looks fresh. I put it all together 1/2 hour before I left to the wedding.
