Well we were snowed in today! The blueberry buckle from yesterday was gone in a flash! The kids wanted some more, I did not have much blueberries, but I did have a bag of mixed fruit in the freezer so I made it with mixed fruits. So now while were here stuck in the house, at least we have something delicious to snack on:)
What you will need:
- 1/4 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 2- 1/2 cups of mixed fruit ( I used frozen peaches, strawberries and mango mix) and I had a 1/2 cup fresh blueberries I added to the batter as well
In a mixing bowl, cream butter and sugar. Beat in the egg. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Fold in the blueberries. Pour into greased 9-in. square baking pan.
For topping:
- 2/3 cup sugar
- 1/2 cup flour
- 1/2 teaspoon cinnamon
- 1/3 cup cold butter or 1/4 veg oil ( I used canola oil)
For topping, combine the sugar, flour and cinnamon in a bowl; cut in butter (or use hands) until crumbly or if using oil mix with your hands till gets crumbly. Sprinkle over batter. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean.
