Delicious, moist cinnamon swirl loaf cake, need I say more? If you love cinnamon rolls, or coffee cake you are sure to love this cake too!
What you will need:
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/4 salt
- 1 cup plain yogurt
- 1 cup sugar
- 3 large eggs
- 1/2 cup light tasting olive oil
- 1 heaping tsp cinnamon
- 1 tbsp dark brown sugar
- 1 cup powdered or icing sugar
- 3 tbsp cream or milk
Preheat oven to 325 degrees. Grease bottom of 8 inch loaf pan and add a piece of parchment, enough so that it sticks out over the sides of the pan.
Combine the flour, baking powder and salt, set aside. In mixing bowl, combine yogurt, eggs, sugar and olive oil.
Add dry ingredients into the mixing bowl (egg mixture), beat until blended, takes less than a minute.
Pour 1 cup of the batter into a measuring cup, stir in cinnamon and brown sugar. Add the white batter to the loaf pan. Spoon over the cinnamon batter over and swirl with a knife.
Bake for 45-55 minutes, or until toothpick comes out clean.
Remove from pan with parchment.
In a bowl, combine icing sugar with cream to make glaze. Spoon over cake.
