Ever open a box of tea biscuits and find them all broken to pieces? Yeah that happens to me all the time. So what to do with all these broken cookies? Don’t toss them out or return the box! Make this instead!
You don’t have to add the marshmallows; I happened to have a open bag of mini marshmallows so I threw them in the mix for fun! So if you have them, great; if you don’t, no worries!
You can make this with dark or milk chocolate; you can use any chocolate you have on hand. Baking bars/wafers, chocolate bars or chocolate chips work.
I used about a row of broken cookies for this loaf, along with 3/4 of a bag of melted chocolate chips and a few handfuls of mini marshmallows. If you want, you can add more chocolate. I don’t measure when I make this kind of thing; I just throw it all together!
Break the cookies up with your hands into small pieces, add to a mixing bowl, combine with melted chocolate and add mini marshmallows if using.
Take two pieces of wax paper and lay out the mixture and wrap it up to shape it into a log. Close up ends and refrigerate until firm. This takes about an hour.
Remove from fridge, and gently unwrap wax paper from loaf, slice log to serve. Enjoy!
Keep leftovers out in a tight sealed container.
