I came up with this idea as I was short on time and didn’t feel like baking. I had guests come over for iftar dinner, which is breaking of the fast, so my focus was dinner food not dessert. I don’t like to fuss or make difficult or time consuming foods in Ramadan, so this dessert was perfect for me!
Everyone loved them; the pan was gone in a flash! Sometimes the simplest things make people happy, and after a day of fasting comes appreciation and happiness. Food doesn’t always have to be fancy; good company and blessing from a gathering is what makes it special.
I used regular chocolate chip cookies for this, you need at least 48 cookies. You can of course use homemade cookies for this if you have any on hand, but I had a box of cookies so I used what I had. Next time I may use rainbow chip, a childhood favourite of mine.
You will need less than half a container of ice cream, unless you want to cut thicker slices. I used vanilla ice cream, you can use chocolate ice cream if you prefer.
I used parchment paper to line the pan with, but you can use plastic wrap or foil; I found it easy to remove the bars and well less clean up! I used a 9 x 13 inch pan.
Lay the cookies on the bottom of the pan, and top with slices of ice cream then top with cookies. Cut into bars and freeze until ready to serve. Enjoy!
