This is an Egyptian recipe my Grandmothers friend always made, she taught me how to make it many years ago as I loved it when she made it for us.
What you will need:
- 1 whole roasted chicken cooked and cut up
- 1 and 1/2 cups parboiled rice
- 1/4 cup orzo
- 3tbsp butter
- 3tbsp olive oil
- 2 tbsp vinegar
- 2-3 whole pita thin or thick (you may lightly toast it if you like)
- 3-4 cloves of garlic chopped
In 2 qt pot brown the orzo with 1 tbsp butter and 2 tbsp olive oil, add rice when orzo is brown.
For 1 and 1/2 cups parboiled rice with the orzo you will need 3 and 3/4 cups of water, cook on low/medium heat covered season with salt.
In another pan melt the remaining butter and add the 1 tbsp olive oil and fry the garlic till fragrant.
Take pita bread and break up with hands, place on bottom of 13×9 pan pour over the garlic/butter on top. Sprinkle the vinegar on top of bread and chicken juices from roasting (optional).
Spoon over cooked rice then top with the cooked chicken pieces, serve with salad.
You can do this dish with lamb meat as well.
