A warm bowl of soup with a piece of fresh bread always hits the spot! This is one of our favourite soups, its really so tasty and good for you! Perfect for when you have a cold!
What you will need:
- 3-4 chicken pieces or bones
- 1 pot of water
- 1 carrot peeled
- 3 cloves of garlic
- 1/2 cup approx filini noodles or rice
- 1 chicken cube (msg free and its optional)
- 3 tbsp yogurt
- 1 egg
For the soup, bring the chicken, garlic, and carrot to boil in large pot and season with some salt.
Let simmer for approx 1 hour and half if using whole chicken or until chicken is fully cooked (falling off the bone), skim off foam from top while its boiling.
Remove veggies and chicken.
Let cooked chicken cool, de-bone the chicken. Discard the garlic, cut up the carrots and add back to soup.
Drain the soup with strainer into new pot, add to medium heat.
Now is the time you add the noodles to the soup, about 1/2 cup should do, depending which noodles your using and how watery or thick you like your soup.
You can add chicken pieces and the carrot now.
Add chicken cube, meanwhile in a mixing cup or bowl, whisk the yogurt and egg and temper with half a cup of soup whisk in quickly. Then take that mixture and whisk into soup, remove from heat. Ready to serve.
I chopped up some fresh parsley and sprinkled on top when serving in bowl, its healthy and tasty.
