One of my favourite things was walking into the kitchen and seeing my mom making home made chicken noodle soup with chicken salad sandwiches. My aunt used to make chicken noodle soup with these little ball shaped noodles,called Acini di pepe, where as my mom made them with egg noodles or ditalini. I would get so excited about it! I just loved it so much!
Now I make my own home made soup just like mama used to make me…..(she still makes it for me when im sick)
- 1 whole chicken or chicken pieces
- 1 pot of water
- 1 carrot peeled
- 1 celery stick
- 1 onion,
- filini noodles,or orzo, or egg noodles or acini de pepe (any noodle you prefer)
- 2 chicken cubes
- 1/2 tsp turmeric
- chicken pieces
- 3-4 heaping tbsp mayonnaise
- 1 tsp mustard
- 1 stick of celery chopped small
- 1/2 small head of lettuce chopped up small
- salt and pepper to taste
- 1/2 tsp poultry seasoning
Mix all ingredients together, and make into sandwiches with fresh bread
For the soup, bring all ingredients except the chicken cubes, noodles and turmeric together to a boil, let simmer for approx 1 hour and half if using whole chicken or until chicken is fully cooked, skim off foam from top while its boiling.
Remove veggies and chicken. Let cooked chicken cool, de-bone the chicken. Discard the onion and celery, if u like u can cut up the carrots and add back to soup.
Drain the soup with strainer into new pot, add to medium heat.
Now is the time u add the noodles to the soup, about 1/2 cup should do, depending which noodles your using and how watery or thick you like your soup.
You can add some chicken pieces and the carrot now. Add 2 chicken cubes and 1/2 tsp turmeric for colour. Cook till noodles are done, and then your ready to serve.
