- 2 cups basmati or jasmine rice (or rice of your choice)
- 6 chicken pieces (legs and thighs attached) or 1 whole chicken cut into pieces
- 1 onion chopped
- 1 tbsp butter
- 3-4 tbsp olive oil
- seasonings for chicken: 2 tsp paprika, 1 tsp garlic salt, 1 and 1/2 tsp seasoning salt
- seasonings for rice: 2 tsp paprika, 1 tsp herb salt, 1 tsp seasoning salt
In roasting pan, place chicken and rub with seasonings, bake in oven at 375 for 35 minutes for smaller pieces, 45 for larger.
Meanwhile melt butter in pan add oil, saute onion till tender and golden. Add the paprika, and the other seasonings, taste and adjust seasoning.
Add rice to the pan, stir around mix with the seasonings and onions for 3-5 mins on medium heat. When the chicken has cooked for 35-45 mins remove from pan and transfer the rice in that pan.
Cover the rice with 4 cups water (season with salt if needed). Place chicken on top of the rice, return to oven cover with foil wrap, lower heat to 350 and cook for 30-35 minutes till rice and chicken is cooked.
