With all these veggies growing in the garden all at once it is hard to catch up! I am always looking for new ideas to make use of these lovely gems! I tried a zucchini chocolate cake last month but it didn’t turn out that great, I didn’t use enough oil, it turned out dry and it was heavy! I looked around for an easy recipe to follow and I found one!
I had some cherries in the fridge that were waiting for me to pit and make use of, I had planned to make ice cream with it…still do.
I really thought the cherries would go well with it, I happen to love cherries with chocolate…black forest cake anyone? Ohh that reminds me I haven’t made that in a while!
So I guess I should call this garden forest cake!;)
This cake is moist and delicious! You cannot tell that their is zucchini in it…I haven’t told the kids yet…and they haven’t guessed it so we’re good!:) Hope they don’t catch this post!
This is my adaptation from allrecipes zucchini chocolate cake!
What you will need:
- 2 cups flour
- 2 cups sugar
- 2/3 cups sour cream
- 1 cup olive oil
- 3/4 dark cocoa
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 salt
- 1 tsp cinnamon
- 2 cups grated zucchini
- 2 cups pitted halved cherries
- 4 eggs
- Whipping cream
- 1 -2 tbsp icing sugar
Grease 13×9 inch baking pan.
Combine all dry ingredients together in the mixer bowl, then add eggs, sour cream and oil. Mix until mixed well. Add in the zucchini and cherries. Pour into the greased pan and bake in preheated oven 350 for 40-50 minutes until baked, check with toothpick.
When cake has cooled, whip the whipping cream and fold in the icing sugar to sweeten, pipe over the cake, enjoy!
Even without reading the name of this fabulous cake the superb picture got all my attention, I'll give it a try soon. Everything put together so beautifully, what's not to love it. You did a great job.
