Shared this on Facebook last night, I wasn’t planning on making this a blog post…but I realized not everyone follows me on Facebook, I don’t want anyone missing out on this yummy recipe. It all started last night when my mom asked for a black forest cake.
Thing is my mom doesn’t even like cake! One of those cravings I guess…I had a bunch of cherries left in the fridge that no one was eating, so we took the pits out and made them into a delicious topping for the chocolate cake I baked!
I basically just threw the ingredients in the pot and it turned out great! The cake had over baked a bit for my liking, I really love moist cakes, I felt like I left it in for a few minutes longer just enough to make it a bit dry. What I normally do when that happens, is brush over some simple syrup over, it moistens up even the driest cakes! I usually have a cup of it in the fridge you never know when you will need it;)
You can let the filling or topping cool down or add it over the cake right after its cooked, just make sure to add the whipped cream on the part where there is no cherries otherwise it will melt and make a mess of your beautiful piece of cake! If you do allow your cherries to fully cool down, you can bake the cake in a bundt pan and decorate it like this easy-black-forest-cake.
What you will need for cherry filling:
- Approx 3 cups of pitted cherries
- 2 tsp cornstarch
- 1 tsp raspberry or cherry gelatin
- 1/4 cup sugar
- 1/2 cup water
Bring all ingredients to a boil, if its too thick add more water, if too thin add a bit more gelatin or cornstarch. Cook till glossy, takes a couple of minutes. Spoon cherry filling over your chocolate cake and serve with whipped cream! Enjoy
